Rashid Suleiman is a Lecturer and Head of the Department of Food Science and Agroprocessing at Sokoine University of Agriculture where he is responsible for leading the department, and teaching food science and biological systems subjects. He serves as a chairperson of Agriculture and Food Standards Division Committee (AFDC) of Tanzania Bureau of Standards (TBS) which oversee over 29 different Agriculture and Food Technical Committee. Dr. Suleiman is a chairperson of National Codex Committee and a member of several academic, professional and scholarly societies.
Dr. Suleiman’s research program focuses on food safety, food quality management, new product development and post-harvest management applied to grain, and fruits and vegetables. Projects involve post-harvest loss reduction and prevention, food security, food systems, mycotoxins, value-added products and process, grain storage and stored products protection, extrusion technology, new product development and formulation, techno-economic analysis and food packaging.
Dr. Suleiman’s outreach program focuses on crop post-harvest handling, storage, processing and loss prevention, mycotoxins control, nutrition feeding program, and food and nutrition security. He has facilitated a number of trainings, consultant, short-courses and workshops on food safety management, Hazard Analysis of Critical Control Points (HACCP), post-harvest management of grains, fruits and vegetables and value addition of agricultural produces. His current research include: (i) reducing postharvest losses of fruits and vegetables using innovative free energy technology to increases income and improve livelihood of smallholder’s farmers in Zanzibar, (ii) Food Systems-Africa (FOODLAND)- FOOD and Local, Agricultural, and Nutritional Diversity, (iii) Reduction of Post-Harvest Loss of Tuna and Tuna-Like Species Through Value Addition to Improve Food Security in Tanzania, (iv) Development of Nutritious Aflatoxin-Safe Complementary Food Formulation Based On Aflatoxin Free Susceptible Ingredients, (v) Development and Acceptability Testing of Ready-to-Use-Complementary Food Supplement for treating Moderately Acute Malnutrition in Children Aged 6-24 Months in Tanzania, and (vi) Assessment of safety of maize flour produced using Hammer Mills: The Case of Heavy Metal Content.
